(Image: Shoprite)Wilma den HartighPiet Nkambule from Newcastle in Kwazulu-Natal makes South Africa’s best boerewors. He was selected as the winner of the 2012 Shoprite Checkers Championship Boerewors Competition, an annual event hosted by the supermarket group to identify the country’s best traditional boerewors recipe.Before Nkambule made it into the top 10, his award-winning recipe was put to the test and tasted by a panel of high profile food experts. Over a period of four months, the judges tasted thousands of pieces of boerewors across the country to find a recipe that stands out.Nkambule’s recipe was selected from more than 1 000 entries that went through three rounds of elimination.Martin Kobald, one of the judges, who is a chef and honorary past president of the South African Chefs Association (SACA), says Nkambule’s boerewors recipe was exactly what the judges were looking for.“It had an authentic flavour and you could taste the coriander and cloves nicely,” Kobald explains. “When it was cooked the combination of flavours unfolded better than others.”Another judge of the competition and executive chef, Jeff Schueremans, says the winning boerewors had a prominent beef and pork flavour. “That was the best one of all of them,” Schueremans says.Determination pays offIn addition to receiving the coveted title, South Africa’s boerewors champion should also be commended for his perseverance. Even though he has participated 19 times in the competition, without ever reaching the finals, he never gave up.But this was his lucky year.“I can’t believe I actually won,”Nkambule says, and he can’t wait to receive his prize which includes a new Toyota Hilux 2.7 double cab raised body raider, R2 500 (US$286) holiday voucher from food company All Gold, R2 000 ($229) Coca Cola cash prize and R750 ($86) worth of vouchers from snack food manufacturer Simba.“In my life I never thought I would drive a new car,” he says.Developing the perfect recipeBoerewors is a type of sausage that is synonymous with South African food heritage. The name comes from the Afrikaans words boer (farmer) and wors (sausage).Boerewors is usually braaied, a method that cooks food on an open fire, but some South Africans would, somewhat reluctantly, concede that it can also be grilled under an electric grill, fried, or baked in an oven.Kobald says that the recipe for traditional boerewors is legislated and must strictly adhere to certain guidelines. Although it is up to individuals to adjust the ratios of the ingredients, boerewors must contain at least 90% meat, always containing beef as well as lamb or pork, or a mixture of lamb and pork. Not more than 30% of the meat content may be fat and it can’t contain any mechanically recovered meat.Apart from the meat content, no other ingredients may be added except vinegar, spices, herbs, salt or other harmless flavourants and water. Cereal products such as oats or bread crumbs may be used as binding agents, but it should be suitable for mass production and a specific shelf life.“Although the ingredients are legislated, there is always someone’s boerewors that stands out and this is what we wanted to find,” Kobald says.Nkambule isn’t a newcomer to the meat industry. He’s worked in butcheries since 1977, when he started out by making deliveries. After many years, he’s learnt the tricks of the trade and, of course, what makes a good boerewors.He says he has taken a lot of time to perfect his winning recipe, now a closely guarded secret.“Over the years people have given me many tips and tricks about how to make a good boerewors,” he says.Although he is reluctant to divulge the ingredients of his winning recipe, he does reveal a few pointers for aspiring wors makers.“My secret lies in the special ratio of pork to beef meat I include in my mixture,” he says. “The right quality spices are also very important.”Boerewors under scrutinyFinding the country’s best boerewors is no small feat and an independent judging panel of respected food experts had the tough job of making the final decision.It took 85 regional and 10 provincial elimination rounds, during which 400 judges from the SACA had to taste and assess more than 55 000 pieces of raw and cooked boerewors to eventually find the top ten that would battle it out at the final.The judges included Martin Kobald; Arnold Tanzer, Sunday Times chef of the year 2008; Carmen Niehaus, YOU and Huisgenoot food editor and author of more than 20 cookbooks; Peter Veldsman, author of several cookbooks; and Lungile Nhlanhla, junior food editor at Drum magazine and one of the five finalists of the 2012 Masterchef SA programme.Schueremans explains that the judges have to taste both the raw and cooked boerewors, and contestants also have to provide the spices for a separate tasting to ensure that the correct spices have been used.“When the wors is raw it reveals a different flavour,” Schueremans says.Kobald adds that by tasting the raw product, the judges can also determine if the ingredients are correct and correspond with the specific recipe provided by the contestant.Cooked to perfectionBecoming the country’s boerewors champion isn’t just about combining the right mix of ingredients – the contestants must also cook the boerewors to perfection. If it is undercooked or overdone the judges can’t get a good sense of its taste.Kobald points out that cooking the wors is as important as developing the best recipe, as contestants could achieve a high score for their raw product, but get marked down at the cooking stage.To ensure that each individual tasting is accurate, the judges clean their palettes between tastings by eating a dry biscuit and drinking water.In his 13 years of involvement with the competition, Kobald has noticed how contestants have changed and evolved their techniques, and are taking the annual event more seriously.The new Championship Boerewors is in-store and available at all Shoprite, Checkers and Checkers Hyper stores countrywide.Would you like to use this article in your publication or on your website? Alabama head coach Nick Saban got a little heated during somewhat of a rant about satellite football camps and the need for a college football commissioner. Simply against the idea of satellite football camps, and with little belief in the positive narrative surrounding them, Saban let loose Tuesday afternoon in front of the media at the SEC Spring Meetings. Update (July 13, 5:46 p.m.): Germany won the World Cup on Sunday, defeating Argentina 1-0 in extra time.In basketball, it’s a safe bet that the United States men’s national team would defeat even the best NBA teams more often than not. Likewise, it’s hard to imagine any single NHL squad being favored against the Canadian national hockey team, if there were ever an occasion for them to face off. Yet it’s pretty conventional wisdom in soccer circles that the best teams in the Champions League, the world’s top club-level competition, are better than those in the World Cup, soccer’s premier international tournament. That’s because thanks to the economics of soccer, it’s possible for clubs to assemble all-star teams even in the absence of All-Star Games.Intuitively, it’s not hard to see why. Unlike basketball and hockey, where global talent is concentrated in a relatively small number of countries, soccer is a sport played at a high level across a much wider and more diverse set of locales. Talent is then naturally more diluted at the international level. The most important club soccer leagues also lack North American-style salary caps, so the richest club teams are (checkbooks willing) free to accumulate a far greater amount of talent than any national team can.I went to the spreadsheets to settle this debate, and, based on my calculations, the conventional wisdom is indeed wise — to a certain extent. The top club teams in the world as a group are superior to the national teams in this year’s World Cup field. But even so, teams that are the cream of the international crop are not as far behind their club-level cousins as managers like Alex Ferguson and Arsène Wenger would have you believe.One way we can test this is to use the individual plus/minus player ratings that underlie ESPN’s Soccer Power Index (SPI) rankings. We’ve been over the gory details of those ratings before, but here are the basics: In addition to using head-to-head results from international matches, SPI also attempts to measure the talent level of every team based on the skill of its component players. To that end, each player is assigned a per-minute effect rating determined both by his individual statistics and by how his team performs with him in the lineup (compared to its performance without him). ESPN’s Stats & Info team computes this for both national and club teams, provided the player’s club is in one of the “Big Five” European leagues1Those of Spain, England, Italy, Germany and France. or appeared in the Champions League.These numbers give us a player’s approximated influence on his team’s rate of scoring and preventing goals. For instance, Lionel Messi, the impossibly good attacker for Barcelona (on the club side) and Argentina (in this World Cup), is estimated to add 0.62 more goals per 90 minutes than an average player on offense, and save 0.03 more goals per 90 minutes than the average player on defense, for a net value of 0.65 goals per 90 minutes. (Nobody tops Messi among players with any kind of playing time over the past two seasons, although Messi’s longtime rival Cristiano Ronaldo is a close second at 0.63.)If we aggregate these ratings for an entire roster, weighting by the number of minutes each player was on the pitch,2The minutes data I used for club teams was from the 2013-14 season; for national teams it was from the 2014 World Cup, through the semifinal round. we can derive an SPI-like number to describe the amount of talent on any team, whether it plays for club or country.3A team’s overall SPI is determined by a combination of its projected goals scored (offensive SPI) and its projected goals allowed (defensive SPI) against a theoretical average international opponent. And according to these numbers,4SPI player ratings are up to date through the World Cup quarterfinals. the three best club teams in the world — Real Madrid, FC Barcelona and Bayern Munich — are a cut above the best national teams. But, in turn, the four most talented national teams — Brazil,5Remember, this rating includes Neymar and Thiago Silva both playing more than 80 percent of their available minutes. Argentina, Germany and Spain — are solidly better than the next tier of club teams, a group that includes Manchester City, Paris Saint-Germain and the Champions League runners-up, Atletico Madrid.According to these numbers, Messi’s club team (Barcelona) would win 56 percent of its matches against his national team (Argentina) if they somehow played in a knockout setting at a neutral location (this model obviously assumes a dramatic development in cloning technology). But Argentina would be expected to win 56 percent of its matches against Manchester City or Atletico Madrid under similar circumstances. The top national teams would be favored (or at least evenly matched) against all but the world’s very best club teams.Perhaps this shouldn’t be overly surprising. I combined Transfermarkt values for every player on this year’s World Cup rosters6Thanks to the research of my Grantland colleague Bill Barnwell. with Transfermarkt’s list of the 100 most valuable club teams in the world and found a similar pattern. A handful of club teams dominate the list of most valuable teams,7There’s one big divergence here from the SPI list: According to Transfermarkt’s player values, the Spanish national team roster is better than any in the world. but after that it’s a relatively equal smattering of club and national teams rounding out the top 20.8The dollar amounts in the table below were converted from British pounds, at $1.70 per GBP. The top-tier national teams at least appear capable of standing toe to toe in talent against most of the leading clubs in the world.9Occasional FiveThirtyEight contributor Roger Pielke, Jr., noticed a version of this phenomenon back before the 2010 World Cup. But aside from that top tier, national teams just can’t keep up with their counterparts on the club side. According to both the SPI talent ratings and the Transfermarkt valuations, there are about 10 or so national sides capable of contending with the top 10 club teams in the world. After that, the supply of strong national squads quickly starts to dry up. Based on the SPI estimates, the 15th-best national team in the world (Ivory Coast) would have just a 40 percent chance of beating the 15th-best club team (Benfica of Portugal’s Primeira Liga), and only a 21 percent probability of beating Real Madrid. According to SPI’s player ratings, 33 of the 50 most talented teams in the world are club teams.In that sense, pundits are right when they contend that the quality of play in a circuit like the Champions League is higher than that of the World Cup. Certainly it’s hard to argue that the worst teams in the World Cup’s group stage would be able to consistently compete with their counterparts in the Champions League group stage. But in its later rounds, the World Cup contains teams — like the German and Argentine squads that will face off in Sunday’s final — whose rosters rival almost any in the sphere of big-time club soccer.

That loss came to the No. 16 Fairfield Stags (11-3, 3-1) — the tourney’s top seed — by a margin of 7-5 on the road to notch their only conference loss of the season.When three teams in a five-team league all have a 3-1 record at season’s end after an ECAC round robin, they share a regular season title as tri-champions.OSU, Air Force and Fairfield look to add a tournament title to their résumés, however, as the winner of Saturday’s final gets an automatic bid to the NCAA Tournament.Seeding is accomplished by precedence of overall record in the event of a tie like this.And while Bellarmine, the ECAC’s fifth team, is 7-5 on the season, the team was winless within the conference, allowing the 5-10 Wolverines to snag the last spot.The Buckeyes will need another strong performance from senior goalie Scott Spencer to stifle an offensively-sound Air Force team that averages 42.3 shots per game and scores almost 12 goals per game. Spencer’s performance tending net could be the difference between a victory or a loss, especially if he can replicate his career-high 14 saves from the last game against Air Force.Air Force has allowed exactly as many shots on goal in the fourth quarter as it has taken throughout the course of the season at 63.OSU freshman midfielder Jake Withers went 10 for 17 on face offs in the April 19 victory.Sophomore attackman Ryan Hunter led the Buckeyes with four goals in that game, but junior midfielder Jesse King – the team’s leading scorer throughout the year – might have to produce more in this game than he did with his one-goal, one-assist contribution if OSU is to outduel the Falcons again.Game times for Fairfield-Michigan and OSU-Air Force are scheduled for 5 and 8 p.m., respectively. The winners are set to face one another at 5 p.m. Saturday.

Credit: Jack Westerheide | Photo EditorAfter exiting Ohio State’s 31-16 loss to Oklahoma in the second half with an injury, sophomore wide receiver Austin Mack is “probable” for the team’s game against Army Saturday, coach Urban Meyer said in his press conference.Mack made a leaping catch in the third quarter of the Oklahoma game and brought down the 31-yard pass, but hit his head when he landed and was forced to leave the game.“He’s just feeling much better today,” Meyer said. “So they’re very cautious about it. We’ll know more tomorrow. But I put him as probable for the game.”The second-year wideout has two receptions for 37 yards this season. The two receptions matches his total from a year ago, and the 37 yards eclipse last season’s total of 15. He has been listed every week as one of Ohio State’s starting wide receivers. Kickoff for Ohio State’s game against Army is scheduled for 4:30 p.m. in Ohio Stadium.
